Ingredients

  • Whole chicken (3-4 lbs / 1.4-1.8 kg)
  • Olive oil (2 tbsp)
  • Baking powder (1 tbsp, aluminum-free)
  • Salt (1 ½ tsp, kosher or sea salt)
  • Black pepper (½ tsp, freshly ground)
  • Garlic powder (1 tsp)
  • Optional herbs: fresh thyme or rosemary sprigs
  • Optional sides: baby potatoes or carrots
  • Optional: fresh lemon for squeezing after roasting

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels to remove moisture.
  3. In a small bowl, combine baking powder, salt, black pepper, and garlic powder.
  4. Drizzle olive oil all over the chicken, then sprinkle the seasoning mix evenly, including under the skin and inside the cavity.
  5. Optionally, stuff fresh thyme or rosemary sprigs and a halved lemon inside the cavity.
  6. Tie the legs together with kitchen twine to help the chicken cook evenly.
  7. Place the chicken breast-side up on a roasting pan or oven-safe skillet with room around it for air circulation.
  8. Roast for 45-55 minutes, checking at 45 minutes with a thermometer inserted into the thickest part of the thigh; it should read 165°F (74°C).
  9. Remove the chicken from the oven and let it rest for at least 10 minutes before carving.
  10. Carve and serve with your favorite sides or salad.
