Easy Fig and Goat Cheese Flatbread with Honey Drizzle

A quick and easy flatbread topped with sweet figs, tangy goat cheese, and a drizzle of honey. Perfect for entertaining or a weeknight dinner, this recipe comes together in under 20 minutes and is sure to impress.

  • 2 large flatbread crusts (store-bought naan or pre-made pizza dough)
  • 810 fresh figs, stemmed and quartered
  • 4 oz goat cheese, crumbled
  • 23 tablespoons honey
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons extra-virgin olive oil
  • Balsamic glaze (optional, for drizzling)
  • Salt and black pepper to taste
  • 1 cup arugula (optional, for topping)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the flatbread crusts on the prepared baking sheet. Brush each piece lightly with olive oil, including the edges.
  3. Pre-bake the crust for 5 minutes until the edges start to turn golden.
  4. While the crust is pre-baking, crumble the goat cheese into a small bowl.
  5. Remove the pre-baked crust from the oven. Scatter the crumbled goat cheese evenly over the surface, leaving a small border. Arrange the fig quarters on top, pressing them gently into the cheese.
  6. Sprinkle fresh thyme leaves over the top, then add a pinch of salt and a crack of black pepper.
  7. Return the flatbread to the oven and bake for 10-12 minutes, until the cheese is warm and slightly golden and the figs have softened.
  8. Remove from the oven and let cool for 2 minutes. Drizzle honey generously over the top in a zigzag pattern. If using arugula, scatter it on top right before serving.
  9. Slice into wedges or rectangles using a sharp knife or pizza cutter. Serve warm or at room temperature.

Notes

Pre-baking the crust is essential to prevent sogginess. Let the flatbread rest for 2 minutes before drizzling honey so it doesn’t slide off. For a dairy-free version, use cashew-based cheese and maple syrup instead of honey.
