  • 4 salmon fillets (about 6 oz each), skin on
  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 large lemon (zest and juice)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Remove salmon from refrigerator 15 minutes before grilling. Pat fillets dry with paper towels. Season both sides with salt and pepper, then drizzle with olive oil and rub gently.
  2. In a small bowl, combine softened butter, minced garlic, lemon zest (about 1 teaspoon), and a pinch of salt. Mix until well incorporated. Set aside at room temperature.
  3. Preheat grill to medium-high heat (400°F to 450°F). Clean grates with a grill brush and oil them using a paper towel dipped in vegetable oil (hold with tongs).
  4. Place salmon fillets on the grill, skin-side down, at a 45-degree angle to the grates. Close lid and cook undisturbed for 4-5 minutes.
  5. Carefully flip salmon using a fish spatula. Immediately brush the top of each fillet generously with the lemon garlic butter mixture. Close lid and cook for another 3-4 minutes for medium (125°F internal temperature).
  6. During the last minute of cooking, brush another layer of lemon garlic butter onto the salmon.
  7. Remove salmon from grill and transfer to a serving platter. Squeeze fresh lemon juice over the top and sprinkle with chopped parsley. Let rest for 2 minutes before serving.

Notes

For best results, let salmon come to room temperature before grilling. Don’t overcrowd the grill. If butter starts to smoke, move salmon to a cooler part of the grill. Leftover salmon can be stored in an airtight container in the refrigerator for up to 3 days.
