  • 8 oz aged sharp cheddar
  • 6 oz smoked gouda
  • 46 oz wheel brie or camembert
  • 4 oz prosciutto, thinly sliced
  • 4 oz genoa salami or peppered salami
  • Water crackers (e.g., Carr’s)
  • Pumpkin-shaped crackers (e.g., Trader Joe’s)
  • Baguette slices, lightly toasted
  • 1 cup red grapes
  • 1 cup green grapes
  • 1/2 cup dried cranberries or tart cherries
  • 1/2 cup fresh figs or Honeycrisp apple slices (optional)
  • 1/2 cup honey roasted peanuts or candied pecans
  • 1 cup pretzel sticks or mini pretzels
  • 1/2 cup Halloween candy corn
  • 1/2 cup dark chocolate squares or Halloween M&Ms
  • 1/4 cup pumpkin butter or fig jam (optional)
  • Honey for drizzling (optional)

Instructions

  1. Prep the candy corn cheese: Slice the block into even rectangles or triangles about 1/2 inch thick and 2 inches long. Let sit at room temperature for 15 minutes before slicing if cold.
  2. Slice the hard cheeses: Cut sharp cheddar and smoked gouda into similar-sized cubes or thin triangles. Fan out cheddar slices in a line and pile gouda cubes in a small cluster.
  3. Prepare the soft cheese: Remove brie from packaging. Optionally score the top in a crisscross pattern and drizzle with honey. Leave whole.
  4. Fold the meats: Tear prosciutto slices in half lengthwise, then fold each strip into a loose ribbon or small rose shape. Fold salami rounds into quarter-moon shapes. Place in small, separate piles.
  5. Position your bowls: Place small ramekins of pumpkin butter, honey, candy corn, or nuts on the board first, spacing them evenly.
  6. Add the crackers and bread: Fan out water crackers and pumpkin-shaped crackers in small groups around the bowls. Place toasted baguette slices in a separate stack.
  7. Layer the cheeses: Place candy corn cheese slices in a prominent spot, fanned out in a line or semi-circle. Add sharp cheddar and smoked gouda clusters. Place brie wheel with some room around it.
  8. Add the meats: Nestle prosciutto ribbons and salami folds into gaps between cheeses and crackers, near their best pairings.
  9. Fill the gaps with fruits and crunchies: Scatter grapes, dried cranberries, nuts, and pretzels to fill empty spaces, creating an abundant look.
  10. Final touches: Sprinkle real candy corn and dark chocolate squares in small piles around the board. Step back and fill any empty spaces with extra grapes or crackers. Serve immediately or cover and refrigerate for up to 2 hours. If refrigerated, let sit 20 minutes before serving.

Notes

For best flavor, serve cheeses at room temperature. Do not overcrowd the board; use a second board if needed. Keep crackers away from moist ingredients to prevent sogginess. Leftovers should be broken down and stored separately.
