  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar

  • 45 nori sheets
  • 68 thin slices ham (about 4 ounces)
  • 4 ounces cream cheese, softened
  • 4 slices cheddar cheese (or ยฝ cup shredded)
  • ยฝ medium cucumber, seeded and cut into thin strips
  • 1 small carrot, peeled and cut into thin strips
  • 2 tablespoons mayonnaise (optional)
  • Soy sauce, for serving

Instructions

  1. Cook the rice: Rinse 1 cup sushi rice in a fine-mesh strainer under cold water until the water runs clear (about 2-3 minutes). Combine rinsed rice and 1 ยผ cups water in a small saucepan. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 18 minutes. Remove from heat and let it sit, covered, for 10 more minutes. Fluff with a fork.
  2. Season the rice: In a small bowl, whisk together 2 tablespoons rice vinegar, 1 tablespoon sugar, and ยฝ teaspoon salt until dissolved. While the rice is still warm, pour the mixture over it and fold gently with a wooden spoon or rice paddle. Fan the rice for a minute to cool it slightly. It should be at room temperature before rolling.
  3. Prep your fillings: While the rice cooks, cut your veggies. Slice the cucumber into thin strips, about ยผ inch thick. Cut the carrot into similar-sized strips. Slice the cheddar cheese into long, thin strips. Lay out your ham slices. Soften the cream cheese at room temperature.
  4. Set up your rolling station: Place your bamboo mat on the cutting board and cover it with plastic wrap. Have a small bowl of water ready. Lay one sheet of nori, shiny side down, on the mat with the long edge facing you.
  5. Spread the cream cheese: Using a butter knife or offset spatula, spread a very thin layer of cream cheese over the bottom third of the nori sheet (the part closest to you). Use about 1 tablespoon per roll.
  6. Add the rice: Wet your hands with the water bowl. Grab about โ…“ cup of seasoned rice and spread it evenly over the nori, leaving a 1-inch strip at the top edge bare. Press the rice down gently but firmlyโ€”you want an even layer about ยผ inch thick.
  7. Layer the fillings: Place 1-2 slices of ham across the center of the rice, slightly overlapping. Top with 2-3 strips each of cucumber and carrot. Lay 1-2 strips of cheddar cheese alongside the veggies. If using mayonnaise, drizzle a thin line over the fillings.
  8. Roll it up: Using the mat, lift the edge closest to you and fold it over the fillings. Tuck the edge under the fillings gently, then continue rolling forward, applying even pressure. When you reach the bare strip of nori at the top, dab it with a little water from your fingers to seal the roll. Squeeze the mat gently over the roll to shape it. Repeat with remaining ingredients.
  9. Slice the rolls: Using a sharp, wet knife, cut each roll into 6-8 pieces. Wipe the knife clean and wet it again between cuts for clean slices.
  10. Pack for lunch: Arrange the rolls in a lunchbox with a small container of soy sauce for dipping. If packing for later, keep the rolls at room temperature for up to 2 hours, or refrigerate until ready to eat. They’re best eaten the same day.
