  • 1 teaspoon dried oregano

  • 1 tablespoon instant or brewed coffee
  • 1 tablespoon olive oil

Instructions

  1. Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium heat for 3-4 minutes until shimmering but not smoking.
  2. Add the chopped onion and diced red bell pepper. Sauté for 5-7 minutes until soft and fragrant, with onions translucent but not browned.
  3. Stir in the minced garlic and cook for 30 seconds to 1 minute until fragrant.
  4. Add the ground beef or turkey. Break it up with a spoon and cook until browned through, about 8 minutes. Drain excess fat if desired.
  5. Mix in chili powder, cumin, smoked paprika, oregano, salt, pepper, and cayenne pepper. Stir well to coat meat and veggies evenly.
  6. Pour in the tomato paste and cook for 2 minutes, stirring often to caramelize and intensify flavor.
  7. Add diced tomatoes, kidney beans, black beans, beef broth, and coffee. Stir to combine and bring to a gentle simmer.
  8. Reduce heat to low, cover, and let simmer for 25-30 minutes, stirring occasionally to prevent sticking.
  9. For creamier texture, scoop out about one cup of beans with some liquid, mash roughly with a fork, and stir back into the pot.
  10. Taste and adjust seasoning with more salt, pepper, or chili powder as desired. Add a splash of broth or water if too thick.
  11. Serve hot with your favorite toppings such as shredded cheese, sour cream, or chopped green onions.
