  • 1 cup (90g) rolled oats
  • ½ cup (130g) creamy peanut butter
  • ¼ cup (85g) honey
  • ⅓ cup (60g) mini semi-sweet chocolate chips
  • 2 tablespoons (14g) ground flaxseed
  • 1 teaspoon vanilla extract
  • 1 pinch sea salt

Instructions

  1. Combine the dry ingredients. In a medium mixing bowl, add 1 cup of rolled oats, 2 tablespoons of ground flaxseed, and a pinch of sea salt. Stir them together with a spatula until evenly distributed.
  2. Add the wet ingredients. Pour in ½ cup of creamy peanut butter, ¼ cup of honey, and 1 teaspoon of vanilla extract. Stir everything together until the peanut butter and honey coat every oat and the mixture looks like a thick, slightly sticky cookie dough.
  3. Fold in the chocolate chips. Add ⅓ cup of mini chocolate chips and fold them in gently.
  4. Chill the mixture (optional but recommended). Pop the bowl in the fridge for 10-15 minutes to make the dough easier to handle.
  5. Roll into balls. Using your hands or a small cookie scoop, portion out about 1 tablespoon of dough per ball and roll them between your palms until smooth and round. You should get about 16-18 balls.
  6. Place on a lined baking sheet. Arrange the balls on a parchment-lined plate or baking sheet. Optionally, sprinkle a tiny bit of flaky sea salt on top.
  7. Chill to set. Refrigerate the balls for at least 30 minutes to firm up.
  8. Store and enjoy. Transfer the balls to an airtight container and keep them in the fridge for up to two weeks.

Notes

If the dough feels too dry, add a teaspoon of honey or a splash of milk. If too sticky, add a tablespoon of oats. Wet your hands slightly before rolling to prevent sticking. For best texture, use old-fashioned rolled oats and natural peanut butter. The flavors improve after a day in the fridge.
