A fresh, vibrant, and no-cook dip made with black beans, corn, and fresh veggies, ready in just 5 minutes. Perfect for quick snacks, parties, and casual gatherings.

  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 cup cherry tomatoes, halved
  • 1 medium red bell pepper, finely diced
  • 2 stalks green onion, chopped
  • 1/4 cup cilantro, chopped (optional)
  • 1 small jalapeño, seeded and minced
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste

Instructions

  1. Rinse and drain the black beans and corn well to avoid any mushiness. Halve the cherry tomatoes and finely dice the red bell pepper and green onions. Mince the jalapeño carefully, removing seeds to control the heat.
  2. In a large mixing bowl, add the black beans, corn, tomatoes, bell pepper, green onion, cilantro, and jalapeño. Toss gently to mix everything evenly without breaking up the beans.
  3. In a small bowl or directly over the veggie mix, whisk together the lime juice, olive oil, red wine vinegar, ground cumin, salt, and black pepper until bright and fresh smelling.
  4. Pour the dressing over the veggie mixture and gently fold it in with a spatula or large spoon, coating every bit without crushing the beans or tomatoes.
  5. Let the dip rest for 5–10 minutes to allow the flavors to marry. It can be served immediately if needed.
  6. Before serving, taste and adjust salt, pepper, or lime juice as desired.

Notes

Rinse and drain beans thoroughly to remove excess sodium and canned flavor. Chop veggies uniformly for consistent texture. Use fresh lime juice for best flavor. Letting the dip rest for a few minutes enhances flavor but can be served immediately. Adjust jalapeño seeds to control heat level. Store in an airtight container in the refrigerator for up to 3 days. Not recommended to freeze.
