  • 1 whole chicken (45 pounds / 1.82.3 kg), preferably organic or free-range
  • 1/4 cup kosher salt (for brine)
  • 4 cups cold water (for brine)
  • Fresh herbs (thyme, rosemary, or sage), a few sprigs
  • 45 garlic cloves, minced
  • 3 tablespoons olive oil or melted butter
  • Freshly cracked black pepper
  • 1 lemon, halved
  • 1 large onion, quartered (optional)

Instructions

  1. Brine the chicken (optional): Dissolve 1/4 cup kosher salt in 4 cups cold water. Submerge the chicken in the brine for 1 to 2 hours in the fridge.
  2. Preheat oven to 425°F (220°C).
  3. Remove chicken from brine and pat dry thoroughly with paper towels.
  4. Season the cavity generously with salt and pepper. Stuff with halved lemon, onion quarters, and a few sprigs of fresh herbs.
  5. Truss the chicken by tying the legs together and tucking the wings under using kitchen twine.
  6. Mix olive oil or melted butter with minced garlic, chopped herbs, salt, and pepper. Use a basting brush to coat the entire chicken evenly.
  7. Place the chicken breast-side up in a roasting pan.
  8. Roast for 50-60 minutes or until the skin is golden and a meat thermometer reads 165°F (74°C) in the thickest part of the thigh.
  9. If skin browns too quickly, loosely cover with foil halfway through roasting.
  10. Remove chicken from oven and tent loosely with foil. Let rest for 10-15 minutes.
  11. Carve and serve with your favorite sides.

Notes

Brining is optional but recommended for juicier meat. Use olive oil for a dairy-free option. If skin browns too fast, cover loosely with foil. Save neck and giblets for stock or gravy. Rest chicken before carving to keep juices.
