Easy One-Pan Garlic Butter Chicken with Green Beans

A quick and comforting one-pan meal featuring juicy chicken breasts and crisp-tender green beans cooked in a rich garlic butter sauce. Perfect for busy weeknights with minimal cleanup.

  • 2 large boneless, skinless chicken breasts (about 1 to 1.5 pounds / 450-680g)
  • 8 ounces (225g) fresh green beans, trimmed
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon dried thyme
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Rinse and pat dry the chicken breasts. Trim the ends off green beans and rinse well. Set aside.
  2. Season both sides of each chicken breast generously with salt, pepper, and dried thyme.
  3. Place a large skillet over medium heat. Add olive oil and 1 tablespoon of butter. Let the butter melt and start to bubble but not brown (about 1-2 minutes).
  4. Add minced garlic to the melted butter and olive oil. Stir constantly for about 30 seconds until fragrant but not burnt.
  5. Add chicken breasts to the pan. Cook undisturbed for 5-6 minutes until golden brown on one side. Flip and cook the other side for another 5 minutes. If breasts are thicker, cover with a lid and reduce heat to medium-low for a few minutes to finish cooking through.
  6. Nestle the green beans around the chicken in the same pan. Add the remaining 2 tablespoons of butter on top of the beans. Stir gently to coat the beans in butter and garlic drippings.
  7. Cook green beans for 5-7 minutes, stirring occasionally, until bright green and just tender but still slightly crisp. If needed, add a splash of water and cover for a minute or two.
  8. Squeeze fresh lemon juice over the chicken and green beans. Stir once more to combine flavors.
  9. Transfer chicken and green beans to plates, spoon extra garlic butter sauce from the pan over the top, and serve immediately.

Notes

Do not overcrowd the pan to ensure a golden crust on the chicken. Use fresh garlic to avoid bitterness. Let chicken rest a few minutes before slicing to retain juices. For thicker breasts, cook covered on low heat to avoid drying out. Butter and olive oil combination prevents burning. Fresh green beans provide best texture; frozen can be used but will be softer.
