A quick and flavorful weeknight dinner featuring juicy chicken thighs and roasted root vegetables coated in a tangy-sweet maple dijon glaze, all cooked in a single pan for easy cleanup.

  • 1.5 to 2 pounds boneless, skinless chicken thighs
  • Root vegetables (carrots, parsnips, sweet potatoes), cut into 1-inch cubes
  • 2 tablespoons Dijon mustard
  • 1/4 cup pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Kosher salt and black pepper, to taste
  • Red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash, peel (if needed), and cut root vegetables into uniform 1-inch cubes. Place in a large bowl.
  3. Drizzle 2 tablespoons olive oil over vegetables. Sprinkle with half the salt, pepper, and thyme. Toss to coat and spread on one side of a large rimmed baking sheet.
  4. Pat chicken thighs dry with paper towels and place on the other side of the baking sheet.
  5. In a small bowl, whisk together Dijon mustard, maple syrup, minced garlic, remaining olive oil, remaining herbs, salt, and pepper until emulsified.
  6. Pour half the sauce over the vegetables and the other half over the chicken. Ensure everything is coated.
  7. Roast for 20 minutes.
  8. Remove pan from oven. Flip chicken thighs and stir vegetables. Return to oven and roast for another 15-20 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender and caramelized.
  9. Let chicken rest for 5 minutes before serving.

Notes

Do not skip drying the chicken to ensure proper browning. Cut vegetables into uniform 1-inch pieces to prevent mushiness. Avoid overcrowding the pan to allow for caramelization rather than steaming. If the sauce burns, cover loosely with foil. This recipe is naturally gluten-free and dairy-free.
