  • 1 tablespoon fresh lemon juice
  • Pinch of sea salt
  • Freshly cracked black pepper (optional)
  • 2 slices whole grain or sourdough bread
  • 1 teaspoon olive oil or butter
  • 1 cup plain Greek yogurt (full-fat)
  • 1 teaspoon honey or maple syrup (optional)
  • 2 tablespoons toasted nuts (walnuts or almonds, roughly chopped)
  • Fresh fruit or berries (optional)

Instructions

  1. Toast the bread: Heat your toaster or skillet to medium-high. Brush each side of the bread slices lightly with olive oil or butter. Toast until golden and crisp, about 2-3 minutes per side in a skillet, or 3-4 minutes in a toaster.
  2. Mash the avocado: In a small bowl, scoop out the avocado flesh and mash with a fork. Add the fresh lemon juice and a pinch of sea salt. Mix well until creamy but still slightly chunky. Adjust salt or lemon juice as needed.
  3. Prepare the Greek yogurt topping: Spoon the Greek yogurt into a small bowl. Drizzle with honey or maple syrup if desired and stir gently to combine.
  4. Assemble the toast: Spread a generous layer of the mashed avocado on each toasted bread slice. Spoon or dollop some of the sweetened Greek yogurt on top or on the side. Sprinkle toasted nuts over the yogurt and add fresh berries if using.
  5. Season and serve: Finish with a few cracks of black pepper over the avocado toast for a mild kick. Serve immediately.

Notes

Use ripe but not mushy avocado for best texture. Lemon juice prevents browning and adds brightness. Toast bread to a golden crust but keep the center soft. Greek yogurt can be loosened with a splash of milk or water if desired. Variations include adding cayenne pepper for heat or fresh herbs to yogurt for flavor. For vegan option, use dairy-free yogurt and gluten-free bread.
