These easy rainbow fruit kabobs are a quick, healthy, and fun after-school snack that kids love. Made with fresh fruit and wooden skewers, they are a colorful and delicious way to refuel after a busy day.

Ingredients

  • 1 cup strawberries, hulled and sliced
  • 1 cup mandarin oranges, drained (or cantaloupe, cubed)
  • 1 cup pineapple, cubed
  • 1 cup green grapes
  • 1 cup blueberries
  • 1 cup purple grapes or blackberries
  • 810 wooden skewers (6-inch or 8-inch)

Instructions

  1. Wash and dry the fruit thoroughly. Pat dry with paper towels to remove excess moisture.
  2. Prep the fruit: hull and slice strawberries, cube pineapple or cantaloupe, drain mandarin oranges. Leave grapes and blueberries whole.
  3. Build the rainbow: Thread fruit onto skewers in rainbow order: red (strawberry), orange (mandarin or cantaloupe), yellow (pineapple), green (green grape), blue (blueberry), purple (purple grape or blackberry). Leave about an inch of bare skewer at the bottom for a handle.
  4. Repeat with remaining fruit to make 8-10 kabobs.
  5. Arrange on a serving platter and serve immediately, or refrigerate for up to 2 hours.

Notes

For best results, use fresh, firm fruit and pat it completely dry to prevent soggy kabobs. If making ahead, store prepped fruit separately and assemble just before serving. For a fun twist, serve with yogurt dip or melted dark chocolate.
