Easy Sheet Pan Lemon Herb Pork Chops with Asparagus and Potatoes

A quick and easy sheet pan dinner featuring juicy lemon herb pork chops roasted alongside crisp asparagus and tender baby potatoes. Perfect for busy weeknights with minimal cleanup.

  • 4 bone-in or boneless pork chops (about 1-inch thick)
  • 1 bunch asparagus, trimmed (about 1 pound)
  • 1 pound baby potatoes, halved (Yukon gold or red potatoes)
  • 1 large lemon, juiced and zested
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat
  • Optional: Parmesan cheese for sprinkling over asparagus

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with 1 tablespoon olive oil, half the minced garlic, half the lemon zest, salt, pepper, and half the chopped rosemary and thyme. Spread evenly on one side of a large sheet pan.
  3. Roast the potatoes for about 15 minutes to give them a head start.
  4. While potatoes roast, mix the remaining olive oil, lemon juice, garlic, herbs, salt, and pepper in a small bowl. Rub this mixture all over the pork chops. Let sit for 10-15 minutes if time allows.
  5. Remove the pan from the oven and nestle the pork chops on the empty side. Arrange the trimmed asparagus next to the pork chops, drizzle with a little olive oil and season.
  6. Return the pan to the oven and roast for another 15-20 minutes, flipping pork chops halfway through. Pork should reach an internal temperature of 145°F (63°C).
  7. Remove from oven and let pork chops rest for 5 minutes. Toss potatoes and asparagus in pan juices before serving.
