  • 1/4 cup packed brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup chopped walnuts or pecans (optional)
  • 2 tablespoons raisins or dried cranberries (optional)
  • 2 tablespoons unsalted butter, cut into small pieces
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Set a timer for 35 minutes.
  2. Rinse and dry the apples. Using a corer or paring knife, carefully remove the core and seeds, leaving about 1/2 inch of the bottom intact.
  3. Brush the apples with lemon juice to prevent browning.
  4. In a mixing bowl, combine brown sugar, cinnamon, nutmeg, chopped nuts, raisins or cranberries, and vanilla extract if using. Stir to mix evenly.
  5. Spoon the spiced filling into each apple cavity, packing it gently but firmly.
  6. Place small pieces of unsalted butter on top of the filling in each apple.
  7. Arrange the apples upright in a medium-sized oven-safe baking dish (about 8×8 inches). Scatter any leftover filling around the apples.
  8. Bake uncovered for 35-40 minutes until apples are tender but still hold their shape.
  9. Let the baked apples cool for about 5 minutes before serving.

Notes

If apples soften too quickly, tent the dish loosely with foil halfway through baking to prevent over-softening. Butter is essential for rich texture; coconut oil can be used for a dairy-free version. Apples and filling can be prepped ahead and refrigerated; bring to room temperature before baking.
