  • 2 cans (15 oz each) white beans (cannellini and great northern), drained and rinsed
  • 1.5 cups salsa verde
  • 2 cups low-sodium chicken broth
  • 4 oz cream cheese, softened
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 jalapeño, seeded and minced
  • Salt and black pepper to taste
  • 1/2 cup fresh cilantro, chopped
  • Juice of 2 limes

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker. Season lightly with salt and pepper.
  2. Scatter the diced onion, minced garlic, and minced jalapeño over the chicken.
  3. Sprinkle the ground cumin and dried oregano evenly over everything. Stir gently to coat.
  4. In a blender, combine one can of drained white beans with 1 cup of chicken broth. Blend until smooth.
  5. Pour the blended bean mixture into the slow cooker. Add the remaining can of whole white beans, the salsa verde, and the remaining 1 cup of chicken broth. Stir gently.
  6. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until chicken is fork-tender.
  7. Remove the chicken to a cutting board and shred with two forks.
  8. Return the shredded chicken to the slow cooker. Add the softened cream cheese and stir until melted and incorporated (about 2-3 minutes).
  9. Stir in the lime juice and half of the chopped cilantro. Season with salt and pepper to taste.
  10. Let the chili rest on warm for 10-15 minutes before serving. Ladle into bowls and garnish with remaining cilantro and desired toppings.

Notes

For best results, use low-sodium broth to control salt. Soften cream cheese to room temperature to avoid clumping. Chili thickens as it sits; add extra broth if needed. Flavors improve overnight.
