This small batch habanero mango hot sauce is bold, balanced, and surprisingly simple. It’s the perfect recipe for experimenting with sweet and heat, and it makes a fantastic homemade gift.

  • 1 ripe mango, peeled and roughly chopped (about 1 cup)
  • 4 to 6 habanero peppers, stems removed (leave seeds in for maximum heat, or remove half for milder sauce)
  • 2 cloves garlic, peeled and smashed
  • 1/2 cup white vinegar (distilled white vinegar works best, apple cider vinegar adds a nice fruity tang)
  • 1/4 cup water
  • 1/2 teaspoon salt (kosher salt recommended)
  • 1 tablespoon honey or agave syrup (optional, only if mango isn’t sweet enough)
  • Juice of 1 lime

Instructions

  1. Prep your ingredients. Put on rubber gloves. Chop the mango into rough cubes. Smash the garlic cloves. Remove the stems from the habaneros. For a milder sauce, slice peppers in half and scrape out some seeds and white membrane.
  2. In a small saucepan, combine chopped mango, habaneros, smashed garlic, white vinegar, water, and salt. Bring to a gentle boil over medium heat, then reduce heat to low and simmer for about 10 minutes until mango is very soft and peppers are softened.
  3. After 10 minutes, taste a little liquid from the pan. If too sharp or acidic, stir in honey or agave. Adjust based on sweetness of mango.
  4. Carefully transfer the hot mixture to a blender. Let cool for about 2 minutes. Add lime juice. Start on low speed and gradually increase to high. Blend for a full 60 seconds until completely smooth. Add water a tablespoon at a time if too thick.
  5. Optional: For an ultra-smooth sauce, pour through a fine-mesh strainer into a bowl, using the back of a spoon to push liquid through.
  6. Let sauce cool completely to room temperature. Pour into sterilized glass jar or bottle. Refrigerate for up to three weeks.

Notes

Don’t skip the simmer step; it softens peppers and mango for a smoother emulsion and reduces bitterness. When blending hot liquids, remove the center cap from the blender lid and cover with a folded kitchen towel to let steam escape. The flavor improves after sitting in the fridge overnight. Start with 4 habaneros and adjust heat gradually. Wear gloves when handling habaneros.
