  • 1/3 cup honey
  • 1/3 cup low-sodium soy sauce
  • 45 cloves garlic, minced
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Optional: sesame seeds, sliced green onions, red pepper flakes for garnish

Instructions

  1. In a small bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, and sesame oil.
  2. Pat chicken thighs dry with paper towels. Trim excess fat if desired. Place thighs in a single layer in a 4- to 6-quart slow cooker.
  3. Pour the sauce evenly over the chicken, ensuring each piece is coated.
  4. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until chicken is fork-tender.
  5. Using tongs, carefully transfer cooked chicken to a plate or cutting board. Cover loosely with foil to keep warm.
  6. In a small bowl, mix cornstarch and water until smooth. Pour the slurry into the slow cooker with the remaining liquid. Stir well, then turn slow cooker to HIGH and cook uncovered for 15-20 minutes, stirring occasionally, until sauce thickens into a glossy glaze.
  7. Return chicken to the slow cooker and spoon thickened sauce over each piece. Let sit for a few minutes.
  8. Transfer to a serving platter, spoon remaining sauce on top, and garnish with sesame seeds, sliced green onions, and red pepper flakes if desired.

Notes

Don’t skip the cornstarch slurry—it’s essential for the sticky glaze. For best texture, cook on LOW. Double the sauce if you love extra for drizzling. Leftovers taste even better the next day.
