  • 4 large flour tortillas (burrito-size, about 10 inches)
  • 12 slices deli turkey breast
  • 8 slices provolone or Swiss cheese
  • 1 cup fresh spinach leaves (optional)
  • 1/2 cup shredded carrots
  • 1/4 cup sliced bell peppers

Instructions

  1. In a medium mixing bowl, combine the softened cream cheese, ranch seasoning packet, and milk. Using a hand mixer on low speed, blend until smooth and creamy—about 30 seconds. If using a spoon, mix vigorously for about 1 minute until no lumps remain. Fold in the chopped chives or green onions if using. Set aside.
  2. Lay your flour tortillas flat on a clean work surface. If they seem stiff or likely to crack, microwave them for 10-15 seconds to make them more pliable. Let them cool slightly before spreading the filling.
  3. Using a butter knife or offset spatula, spread about 3 tablespoons of the cream cheese mixture evenly over each tortilla, leaving a 1-inch border around the edges. Layer 3 slices of turkey over the cream cheese, overlapping slightly. Add 2 slices of cheese on top of the turkey. Sprinkle a handful of spinach leaves, shredded carrots, and bell pepper slices evenly over the cheese.
  4. Starting at one end, tightly roll the tortilla into a log, tucking in the filling as you go. Apply gentle but firm pressure throughout the roll. Once rolled, place the seam side down. Repeat with remaining tortillas.
  5. Wrap each rolled tortilla tightly in plastic wrap or parchment paper. Twist the ends like a candy wrapper to secure. Place the wrapped rolls on a baking sheet or plate and refrigerate for at least 30 minutes—this is crucial for clean slices. For best results, chill for 1-2 hours.
  6. After chilling, unwrap each roll and place it on a cutting board. Using a sharp serrated knife, slice the roll into 1-inch thick pieces. Use a gentle sawing motion rather than pressing down. You should get about 6-8 pinwheels per wrap, depending on thickness. Clean the knife between cuts if it gets sticky.
  7. Arrange the pinwheels on a serving platter if eating immediately, or transfer them to freezer-safe bags or containers for later. If freezing, place them in a single layer to prevent sticking. Label with the date—they’ll keep for up to 3 months.
