Easy Vanilla Bourbon Fig Jam Recipe with Zesty Orange for Homemade Gourmet Spread

  • 2 pounds fresh figs (about 900 grams), ripe but firm
  • 1 cup granulated sugar (200 grams), organic cane sugar preferred
  • 1 whole vanilla bean, split and scraped (or 1 teaspoon vanilla extract)
  • 2 tablespoons bourbon
  • Zest of 1 large orange
  • 1/4 cup fresh orange juice (60 ml)
  • 2 tablespoons lemon juice
  • 1/4 cup water (60 ml)
  • Pinch of sea salt (optional)

Instructions

  1. Rinse the fresh figs under cold water and pat dry. Cut off the stems, then chop into roughly 1/2-inch pieces.
  2. Zest the orange using a microplane, avoiding the bitter white pith. Juice the orange and measure out 1/4 cup.
  3. In a heavy-bottomed saucepan, combine chopped figs, granulated sugar, water, orange juice, lemon juice, vanilla bean (split and scraped with seeds), and orange zest. Stir gently to mix. If using vanilla extract instead of a bean, add it later with the bourbon.
  4. Place the saucepan over medium heat and bring to a gentle boil, stirring occasionally to prevent sticking. Once boiling, reduce to low and let simmer uncovered, stirring frequently as the mixture thickens, about 35 to 45 minutes, until reduced by half.
  5. Five minutes before finishing, stir in the bourbon and vanilla extract (if using).
  6. Test the jam set by placing a small spoonful on a chilled plate; it should wrinkle slightly and hold its shape. If runny, simmer a few minutes longer, stirring often.
  7. Remove the vanilla bean pod and discard or save for other uses.
  8. Ladle the hot jam into sterilized glass jars, leaving about 1/4 inch headspace. Wipe rims clean and seal tightly. Let cool at room temperature before refrigerating.

Notes

Use ripe but firm figs to avoid runny jam. Stir gently and consistently to prevent burning. Add bourbon near the end to preserve flavor. Test jam set with cold plate method. For alcohol-free version, omit bourbon and increase vanilla extract or orange zest.
