These easy watermelon feta mint skewers combine juicy watermelon, salty feta, and fresh mint for a refreshing and light summer snack that’s quick to prepare and perfect for gatherings.

Ingredients

  • Seedless watermelon, cut into roughly 1-inch cubes
  • Feta cheese, crumbled or in small cubes
  • Fresh mint leaves, washed and patted dry
  • Wooden skewers or toothpicks (about 4-inch length)
  • Optional honey-lime glaze: 1 tablespoon honey mixed with juice of half a lime

Instructions

  1. Cut the watermelon into roughly 1-inch cubes using a sharp knife.
  2. Cube or crumble the feta cheese into bite-sized pieces similar in size to the watermelon cubes.
  3. Wash and dry the fresh mint leaves gently.
  4. Assemble the skewers by threading one watermelon cube, followed by a mint leaf, then a feta cube, repeating until the skewer is full (3-4 pieces per skewer).
  5. Optional: Whisk together honey and lime juice and drizzle lightly over the assembled skewers.
  6. Chill the skewers in the refrigerator for 15-20 minutes before serving.

Notes

If watermelon is extra juicy, pat dry before assembling to avoid soggy skewers. Add honey-lime glaze just before serving to keep feta from getting soggy. Soak wooden skewers in water for 10 minutes before grilling to prevent burning. For vegan option, replace feta with vegan cheese or marinated tofu and add toasted nuts for crunch.
