These grilled shrimp skewers are quick, easy, and packed with a garlicky butter herb glaze that keeps the shrimp juicy and flavorful. Perfect for summer BBQs or a last-minute dinner.

  • 1 pound (450 g) large shrimp, peeled and deveined, tails on
  • 4 tablespoons (60 g) unsalted butter, melted
  • 4 cloves garlic, finely minced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh thyme
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)
  • Wooden or metal skewers (soaked in water if wooden)

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. In a small bowl, mix melted butter, minced garlic, chopped parsley and thyme, lemon juice, olive oil, salt, pepper, and red pepper flakes if using.
  3. Toss shrimp in half of the garlic butter mixture and let rest for 10-15 minutes at room temperature.
  4. Thread about 5-6 shrimp on each skewer, piercing through the tail and thick end.
  5. Preheat grill or grill pan to medium-high heat (around 375°F/190°C).
  6. Place skewers on the grill and cook 2-3 minutes per side, brushing shrimp with remaining garlic butter mixture while grilling.
  7. Remove skewers from grill and let rest for 1-2 minutes before serving.

Notes

Pat shrimp dry before marinating to ensure a good sear. Marinate for about 15 minutes to avoid mushy texture. Brush shrimp with garlic butter during grilling to keep moist and flavorful. Soak wooden skewers in water for at least 30 minutes to prevent burning.
