Flavorful Smoked Queso Fundido Dip with Chorizo and Hatch Chili

A smoky, spicy, and creamy queso fundido dip featuring Mexican-style chorizo and roasted Hatch chilies, perfect for casual gatherings and easy weeknight snacks.

  • 8 ounces Mexican-style chorizo, casing removed
  • 2 cups shredded Oaxaca cheese (or a mix of mozzarella and Monterey Jack)
  • 12 roasted Hatch chilies, diced
  • ½ cup finely chopped white or yellow onion
  • 2 cloves garlic, minced
  • 1 small jalapeño, seeded and minced (optional)
  • A handful fresh cilantro, chopped
  • 1 tablespoon olive oil
  • Juice of half a lime
  • Salt and pepper to taste
  • Warm corn or flour tortillas, or crispy tortilla chips for serving (optional)

Instructions

  1. Roast the Hatch chilies over an open flame or under the broiler until the skin is charred and blistered, about 10-15 minutes. Cool in a sealed plastic bag, then peel, deseed, and dice.
  2. Heat olive oil in a cast-iron skillet over medium heat. Add chorizo, breaking it apart with a spatula, and cook until browned and cooked through, about 7-10 minutes. Remove chorizo with a slotted spoon and set aside, leaving oil in the pan.
  3. In the same skillet, add chopped onions, garlic, and jalapeño (if using). Sauté until softened and fragrant, about 3-4 minutes, stirring often.
  4. Return chorizo to the skillet and stir in diced Hatch chilies. Mix well.
  5. Spread shredded cheese evenly over the chorizo mixture. Reduce heat to low and cover loosely with foil or lid. Melt cheese for 5-7 minutes until bubbly and gooey.
  6. Optional: Place skillet under broiler for 2-3 minutes to brown the top lightly. Watch closely to avoid burning.
  7. Remove from heat, garnish with fresh cilantro and a squeeze of lime juice. Serve hot with warm tortillas or crispy chips.

Notes

If you don’t have a smoker or grill, use the oven broiler and add smoked paprika or smoked sea salt to mimic smoky flavor. Drain excess fat from chorizo to avoid greasiness. Melt cheese slowly over low heat to prevent graininess. For gluten-free, use corn tortillas or chips. Vegetarian version can be made by substituting chorizo with sautéed mushrooms or roasted poblano strips.
