  • 1 cup (90g) rolled oats
  • 2 large eggs, room temperature
  • Optional: cinnamon or vanilla extract

Instructions

  1. Mash 2 ripe bananas thoroughly in a medium mixing bowl with a fork or potato masher until mostly smooth with some small lumps remaining.
  2. Add 2 large eggs to the mashed bananas and whisk gently until combined but not overmixed.
  3. Stir in 1 cup (90g) rolled oats until evenly distributed. Let the batter rest for 5-10 minutes at room temperature.
  4. Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Spoon 1/4 cup (60ml) portions of batter onto the pan. Cook for 2-3 minutes until edges are set and bubbles form on the surface.
  6. Flip carefully and cook for another 2 minutes until golden brown and cooked through.
  7. Serve warm with your favorite toppings such as butter, maple syrup, fresh fruit, or nut butter.

Notes
