Fresh 5-Ingredient Watermelon Feta Mint Salad

A quick and easy summer salad combining juicy watermelon, salty feta, fresh mint, lime juice, and flaky sea salt for a refreshing and light dish.

  • 4 cups (600g) seedless watermelon, cubed
  • 1 cup (150g) feta cheese, crumbled
  • ¼ cup (about 15g) fresh mint leaves, roughly chopped
  • Juice of 1 lime (about 2 tablespoons / 30ml)
  • A pinch or two of flaky sea salt

Instructions

  1. Chop the seedless watermelon into 1-inch (2.5 cm) bite-sized cubes, being gentle to keep cubes intact.
  2. Rinse and pat dry fresh mint leaves, then roughly chop about ¼ cup (15g).
  3. Crumble 1 cup (150g) of high-quality feta cheese into a large mixing bowl.
  4. Add the watermelon cubes and chopped mint to the bowl with the feta. Toss gently with a wooden spoon or salad tongs to combine evenly without breaking the watermelon.
  5. Squeeze the juice of one lime (about 2 tablespoons / 30ml) over the salad. Sprinkle a pinch or two of flaky sea salt on top. Toss gently once more to distribute the flavors.
  6. Serve immediately for the freshest taste and texture. If preparing in advance, add mint and feta just before serving.

Notes

Use a sharp serrated knife to cut watermelon to avoid squishing. Toss gently to keep watermelon cubes intact and prevent sogginess. Add mint and feta just before serving if preparing ahead. Fresh lime juice brightens the salad better than vinegar. For dairy-free, substitute feta with firm tofu or cashew cheese. Optional additions include cherry tomatoes, cucumber, or toasted nuts.
