  • 2 large English cucumbers, thinly sliced (or 3 medium Kirby cucumbers for extra crunch)
  • 1 teaspoon salt (to draw out moisture and keep cucumbers crisp)
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • Optional: 1 small carrot, julienned
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon minced garlic
  • 1 tablespoon neutral oil like grapeseed or canola

Instructions

  1. Thinly slice the cucumbers using a mandoline or sharp knife. Place them in a large bowl and sprinkle with 1 teaspoon salt. Toss lightly and let sit for 10 minutes to draw out excess moisture.
  2. After 10 minutes, gently squeeze the cucumbers in a clean kitchen towel or paper towels to remove the brine.
  3. In a small bowl or blender, combine soy sauce, rice vinegar, toasted sesame oil, grated ginger, honey, minced garlic, and neutral oil. Whisk or blend until smooth and slightly creamy. Adjust seasoning to taste.
  4. Add the drained cucumbers and green onions to a serving bowl. Pour dressing over and toss gently to coat evenly. Sprinkle with toasted sesame seeds and julienned carrots if using.
  5. Let the salad chill in the fridge for at least 15 minutes before serving. Serve cold or at room temperature.

Notes

Salt cucumbers properly to avoid sogginess. Squeeze out excess water after salting. Blend dressing for a smooth, creamy texture. Toast sesame seeds lightly before use for enhanced aroma. Dressing can be made ahead and stored up to a week in the fridge. Add sesame seeds and fresh herbs just before serving to maintain texture.
