A refreshing and easy-to-make summer slushie blending juicy peaches, tangy lemon, and fresh mint for a perfect icy treat.

  • 3 large ripe peaches, peeled and sliced (frozen peaches work well too)
  • 1/2 cup freshly squeezed lemon juice (about 34 lemons)
  • 1 cup cold water
  • 3 tablespoons honey or agave syrup (adjust to taste; can swap for maple syrup or simple syrup)
  • 1012 fresh mint leaves, washed and lightly bruised
  • 2 cups ice cubes
  • Pinch of sea salt (optional)

Instructions

  1. Peel and slice 3 ripe peaches. Set aside about 1/4 cup for garnish if desired.
  2. Use a citrus juicer to extract 1/2 cup fresh lemon juice (about 3-4 lemons). Strain to remove seeds.
  3. Place the mint leaves in the blender or a small bowl and gently bruise them with a muddler or wooden spoon to release oils without pulverizing.
  4. In the blender, add the sliced peaches, lemon juice, cold water, honey, and bruised mint leaves. Blend on medium speed until smooth but not too thin.
  5. Add 2 cups of ice cubes to the blender. Pulse in short bursts to break down the ice until the mixture is thick and slushie-like. Avoid over-blending to prevent watery texture.
  6. Taste and adjust sweetness or tartness by adding more honey or lemon juice if desired. Blend briefly after adjustments.
  7. Pour into tall glasses, garnish with reserved peach slices and a sprig of mint. Serve immediately for best texture.

Notes

Use ripe peaches for best sweetness and texture. If using frozen peaches, slightly thaw before blending. Muddle mint gently to avoid bitterness. Blend ice last to maintain fluffy texture. Chill glasses beforehand to keep slushie colder longer. Leftovers can be frozen up to 24 hours; thaw slightly and re-blend before serving.
