  • 4 cups (600 g) ripe, seedless watermelon cubes
  • 2 tablespoons (30 ml) fresh lime juice
  • 10 fresh mint leaves, gently bruised or muddled
  • 2 cups (480 ml) cold water, chilled
  • 1 to 2 tablespoons (1530 ml) agave syrup, honey, or simple syrup (adjust to taste)
  • Ice cubes as needed for serving

Instructions

  1. Chop seedless watermelon into cubes, about 4 cups (600 g). Remove rind for a clean taste. This takes about 5 minutes.
  2. Place about 10 fresh mint leaves in a pitcher or bowl. Using a muddler or wooden spoon, gently press the leaves to release their oils without pulverizing them. This takes around 2 minutes.
  3. Add watermelon cubes to the pitcher. Pour in 2 cups (480 ml) cold water, 2 tablespoons (30 ml) fresh lime juice, and sweetener starting with 1 tablespoon. Stir gently to combine.
  4. Use a hand blender for about 30 seconds until watermelon is pulpy but not completely liquified for chunkier texture. For a smooth drink, pour mixture through a fine mesh strainer into another pitcher, pressing with a spatula to extract juice. This takes 3-5 minutes.
  5. Taste and adjust sweetness if needed. Chill in the fridge for at least 30 minutes to let flavors meld and serve cold.
  6. Fill glasses with ice cubes, pour chilled watermelon agua fresca, garnish with a sprig of mint and a thin lime wheel if desired. Enjoy immediately.

Notes

Do not over-muddle mint leaves to avoid bitterness. Adjust sweetness based on watermelon ripeness. For a smooth texture, strain the juice. Chill for at least 30 minutes before serving. Adding extra ice cubes chills quickly but may dilute flavor. Variations include using sparkling water, adding seasonal fruits, or substituting basil for mint.
