A refreshing and easy summer party recipe featuring juicy watermelon cubes, crumbly feta cheese, and fresh mint leaves assembled on skewers for a perfect bite-sized appetizer.

Ingredients

  • 4 cups (600 grams) seedless watermelon, cut into 1-inch cubes
  • 8 ounces (225 grams) block-style feta cheese, cut into 1-inch cubes
  • 20 fresh mint leaves, washed and patted dry
  • 1 tablespoon (15 ml) extra virgin olive oil
  • Balsamic glaze (optional)
  • 4-inch (10 cm) wooden skewers

Instructions

  1. Cut seedless watermelon into 1-inch cubes and place in a mixing bowl.
  2. Gently toss watermelon cubes with 1 tablespoon of extra virgin olive oil.
  3. Slice feta cheese into 1-inch cubes using a sharp knife.
  4. Rinse and pat dry fresh mint leaves.
  5. Assemble skewers by threading one watermelon cube, one mint leaf, one feta cube, and another mint leaf onto each skewer.
  6. Arrange skewers on a chilled serving platter.
  7. Optionally drizzle with balsamic glaze or extra olive oil before serving.
  8. Serve immediately or refrigerate for up to 30 minutes before serving.

Notes

Use firm, seedless watermelon and block-style feta for best texture. Keep mint leaves dry to avoid sogginess. Assemble skewers just before serving or refrigerate no longer than 30 minutes. Optional balsamic glaze adds a sweet-tart finish. For dairy-free option, substitute feta with firm tofu marinated in lemon juice and olive oil.
