  • ½ cup (120ml) vegetable oil or melted coconut oil
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups (about 225g) grated zucchini (squeeze out excess moisture if watery)
  • ½ cup (90g) dark chocolate chunks or chips (60–70% cacao)
  • Sea salt flakes (Maldon or fleur de sel), about 1 teaspoon, to sprinkle on top

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch baking pan or line with parchment paper with overhang for easy removal.
  2. Grate 1 ½ cups zucchini using a box grater or food processor. Squeeze out excess moisture with a clean kitchen towel if watery.
  3. In a large bowl, sift together flour, cocoa powder, baking powder, and salt. Whisk to combine.
  4. In a medium bowl, beat eggs with sugar until slightly thickened. Add vegetable oil and vanilla extract, mixing until smooth.
  5. Slowly add dry ingredients into wet ingredients, folding gently with a spatula until just combined. Batter will be thick and fudgy.
  6. Fold in grated zucchini and dark chocolate chunks evenly throughout the batter.
  7. Spread batter evenly in prepared pan, smoothing the top.
  8. Bake for 30–35 minutes, checking at 30 minutes with a toothpick; it should come out with moist crumbs but no wet batter.
  9. Immediately sprinkle sea salt flakes evenly over the warm brownies.
  10. Cool completely in the pan on a wire rack before slicing, using parchment overhang to lift brownies out.
