  • 2 tablespoons granulated sugar

  • 1 large egg, beaten
  • 810 standard frankfurters (hot dogs)
  • 8 ounces low-moisture mozzarella cheese, cut into sticks
  • 1 egg beaten with 1 tablespoon water (for egg wash)
  • Coarse sea salt or pretzel salt for topping

Instructions

  1. Activate the yeast: In a small bowl, combine warm water and sugar. Sprinkle yeast on top and let sit for 5-10 minutes until bubbly.
  2. Mix the dough: In a large bowl, combine flour and salt. Make a well and pour in the yeast mixture, melted butter, and beaten egg. Mix until a shaggy dough forms.
  3. Knead the dough: Turn dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.
  4. First rise: Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 45-60 minutes until doubled in size.
  5. Prepare hot dogs: While dough rises, cut mozzarella into sticks. Pat hot dogs dry with a paper towel.
  6. Preheat oven: Preheat oven to 400°F (200°C). Line baking sheets with parchment paper.
  7. Wrap the mummies: Punch down risen dough and divide into 8-10 pieces. Roll each into a 12-14 inch rope. Wrap cheese around the center of a hot dog, then spiral the dough rope around the hot dog, leaving gaps for eyes. Tie ends at the bottom.
  8. Second rise: Place wrapped hot dogs on baking sheets and let rise for 15-20 minutes until puffy.
  9. Bake: Brush with egg wash and sprinkle with salt. Bake for 12-15 minutes until golden brown, rotating pans halfway through.
  10. Cool and serve: Let cool for 5 minutes before serving with mustard, ketchup, or pickled jalapeños.

Notes

Ensure water is not too hot to avoid killing the yeast. Use parchment paper to prevent sticking. Do not skip the second rise for light, airy pretzels. For a spicy version, use pepper jack cheese and spicy hot dogs.
