  • 1 cup (150g) mixed berries (blueberries, raspberries, blackberries, strawberries), fresh or frozen
  • 1 tablespoon (15ml) honey
  • ½ teaspoon (2.5ml) vanilla extract (optional)
  • 1 teaspoon chia seeds (optional)
  • Lemon zest from ½ lemon (optional)

Instructions

  1. Scoop 1 cup (225g) of small-curd cottage cheese into a mixing bowl. For a smoother texture, whisk lightly or pulse in a small blender for 10 seconds (optional).
  2. Stir in ½ teaspoon (2.5ml) of vanilla extract to add a subtle sweet aroma (optional).
  3. If using frozen berries, let them thaw slightly for about 5 minutes at room temperature. If fresh, rinse and pat dry.
  4. Gently fold in 1 cup (150g) of mixed berries, being careful not to crush them.
  5. Drizzle 1 tablespoon (15ml) of honey over the top. If desired, sprinkle 1 teaspoon of chia seeds and lemon zest from half a lemon.
  6. Give the bowl a gentle stir to distribute honey and toppings evenly. Serve immediately or refrigerate for up to an hour if preferred chilled.
