  • 2 large boneless, skinless chicken breasts (about 12 oz / 340 g), cooked and shredded
  • ½ cup (120 ml) BBQ sauce (low-sugar or homemade recommended)
  • About 12 large butter lettuce leaves, rinsed and patted dry
  • ¼ cup finely diced red onion
  • 2 tablespoons chopped fresh cilantro (optional)
  • 2 tablespoons Greek yogurt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 teaspoon olive oil
  • Pickles or sliced jalapeños (optional toppings)

Instructions

  1. Cook the chicken: If not pre-cooked, poach or grill 2 boneless, skinless chicken breasts (about 12 oz / 340 g). To poach, place chicken in a pot, cover with water, add a pinch of salt, and simmer gently for about 15 minutes or until fully cooked. Let cool slightly, then shred using two forks.
  2. Sauté the onions: Heat 1 teaspoon olive oil in a large skillet over medium heat. Add ¼ cup finely diced red onion and cook for 3-4 minutes until softened and fragrant.
  3. Mix the chicken filling: In a mixing bowl, combine shredded chicken, sautéed onions, ½ cup BBQ sauce, 2 tablespoons Greek yogurt, ½ teaspoon garlic powder, ½ teaspoon smoked paprika, and salt and pepper to taste. Stir well to coat evenly.
  4. Prepare the lettuce wraps: Rinse and dry about 12 large butter lettuce leaves thoroughly.
  5. Assemble the sliders: Spoon about 2 tablespoons of the chicken mixture onto each lettuce leaf. Top with chopped cilantro and optional pickles or jalapeños.
  6. Serve immediately to keep lettuce crisp. Pair with a side salad or roasted veggies if desired.

Notes

If BBQ sauce is too thick, thin with a splash of water or apple cider vinegar. Keep lettuce leaves dry and store separately from chicken mixture to avoid sogginess. Assemble sliders just before serving. For dairy-free, substitute Greek yogurt with coconut yogurt or omit. Rotisserie chicken can be used to save time.
