  • Light pinch of sea salt
  • Freshly cracked black pepper to taste (optional)

Instructions

  1. Toast 2 slices of whole-grain bread in a toaster or toaster oven until golden and crisp, about 3-4 minutes.
  2. In a small bowl, gently stir ½ cup (120g) small-curd cottage cheese with ½ teaspoon lemon zest and a pinch of freshly cracked black pepper if using. Set aside.
  3. Wash and slice the nectarine into thin, roughly ¼-inch thick slices.
  4. Spread a generous layer of the cottage cheese mixture evenly over each toasted bread slice.
  5. Arrange nectarine slices on top of the cottage cheese, slightly overlapping like a fan.
