A quick and easy low-carb taco recipe using spiced ground turkey wrapped in crisp lettuce leaves, perfect for weight loss and busy weeknights.

  • 1 lb (450g) lean ground turkey (organic, grass-fed preferred)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil or avocado oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 1 head butter or iceberg lettuce, leaves separated and washed
  • Optional toppings:
  • 1 ripe avocado, sliced or mashed
  • Fresh cilantro leaves
  • Cherry tomatoes, halved
  • Shredded cheddar or Mexican cheese (omit for dairy-free)
  • Greek yogurt or sour cream (can substitute with dairy-free yogurt)
  • Fresh lime wedges for squeezing

Instructions

  1. Finely chop the onion and mince the garlic cloves. Wash and separate the lettuce leaves carefully, patting them dry with a kitchen towel. Set aside.
  2. Warm 1 tablespoon of olive or avocado oil over medium heat in your skillet until shimmering.
  3. Add the chopped onion and garlic to the pan. Cook for about 3-4 minutes until softened and fragrant, stirring occasionally.
  4. Add the ground turkey to the skillet. Break it apart with your spatula and cook for about 5-7 minutes until no longer pink, stirring occasionally.
  5. Sprinkle in chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and black pepper. Stir well to combine.
  6. Reduce heat to low and let the mixture cook gently for another 3-5 minutes to meld flavors. Add a splash of water or broth if mixture dries out.
  7. Lay out lettuce leaves on a platter. Spoon a generous amount of the spiced turkey into each leaf.
  8. Add your favorite toppings such as avocado, tomato, cilantro, cheese, and a dollop of Greek yogurt. Finish with a squeeze of fresh lime.
  9. Serve immediately to keep lettuce crisp and flavors vibrant.

Notes

Chill lettuce leaves in the fridge for 15 minutes before assembling if they are floppy to improve hold and crunch. Do not overcook turkey to keep it moist. Adjust cayenne pepper to control spice level. For dairy-free, omit cheese and sour cream or use alternatives. Leftover turkey can be refrigerated up to 3 days and reheated gently.
