Mississippi Pot Roast: Easy Crockpot Recipe

A simple, no-sear slow cooker recipe using chuck roast, butter, ranch dressing mix, and au jus gravy mix for a tender, savory, and tangy meal that requires minimal effort.

  • 34 lbs Chuck Roast (boneless preferred)
  • 1/2 cup Unsalted Butter (cut into cubes)
  • 1 packet Ranch Dressing Mix (dry)
  • 1 packet Au Jus Gravy Mix (dry)
  • 34 cloves Garlic (sliced or minced)
  • 1/2 cup Red Wine or Beef Broth (optional)

Instructions

  1. Place the chuck roast into the slow cooker insert. Trim any large pieces of hard fat, but leave the marbling intact.
  2. Cut the butter into cubes and scatter them evenly over the top of the roast.
  3. Sprinkle the entire packet of ranch dressing mix over the butter and meat.
  4. Sprinkle the entire packet of au jus gravy mix on top of the ranch mix.
  5. Tuck sliced garlic into the sides of the roast. If using wine or broth, pour it around the base of the roast.
  6. Cover the slow cooker and set it to LOW. Cook for 8 to 10 hours, or HIGH for 5 to 6 hours if short on time.
  7. Remove the roast to a cutting board and let it rest for 5 minutes.
  8. Shred the meat into bite-sized pieces using two forks.
  9. Spoon the hot sauce from the slow cooker over the shredded meat and serve immediately.

Notes

Do not open the lid frequently during cooking as it releases heat. If the sauce is too thin, remove the meat and boil the sauce on HIGH for 15-20 minutes to reduce. For a spicy kick, add jalapeños or red pepper flakes. Ensure you use dry packet mixes, not liquid dressings.
