  • 1/2 cup packed brown sugar
  • 1/2 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 large eggs, room temperature
  • 1/4 cup whole milk
  • 1/2 cup plain dry breadcrumbs or panko
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon apple cider vinegar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line a rimmed baking sheet with parchment paper.
  2. In a small saucepan, combine brown sugar, ketchup, Worcestershire sauce, and apple cider vinegar. Heat over medium heat, stirring constantly, until sugar dissolves (3-4 minutes). Remove from heat and set aside.
  3. In a large bowl, combine ground beef, eggs, milk, breadcrumbs, diced onion, minced garlic, salt, and pepper. Mix gently with hands until just combined; do not overmix.
  4. Transfer meat mixture to prepared pan or baking sheet. Shape into a loaf. If using a baking sheet, form a ridge around the edges to hold juices.
  5. Bake for 30 minutes.
  6. Remove from oven and pour half of the glaze over the top. Spread evenly to cover the surface. Return to oven.
  7. Bake for another 15 minutes, or until internal temperature reaches 160°F (71°C). The glaze should be bubbling and caramelized.
  8. Remove from oven and let rest for at least 10 minutes before slicing to allow juices to redistribute.

Notes

Do not use lean beef as it will result in a dry loaf. Ensure eggs are at room temperature for even mixing. Resting the meatloaf for 10 minutes is crucial to retain moisture. If the glaze burns, cover loosely with foil for the last 10 minutes.
