  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup (115g) unsalted butter, melted and slightly cooled
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (about 2 medium) zucchini, grated and lightly squeezed
  • 1 cup (170g) semi-sweet chocolate chips
  • For the cinnamon swirl:
  • 1/3 cup (65g) brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×5 inch loaf pan with butter or non-stick spray. Line with parchment paper if desired.
  2. Grate the zucchini using a box grater or food processor. Place grated zucchini in a clean kitchen towel and squeeze out excess water.
  3. In a large mixing bowl, whisk together flour, baking soda, baking powder, salt, and ground cinnamon.
  4. Add melted butter, granulated sugar, eggs, and vanilla extract to the dry ingredients. Stir just until combined.
  5. Fold in the grated zucchini and chocolate chips gently.
  6. In a small bowl, mix brown sugar, cinnamon, and melted butter until crumbly and combined for the cinnamon swirl.
  7. Pour half the batter into the loaf pan. Sprinkle half of the cinnamon mixture evenly over the batter. Pour the remaining batter on top, then finish with the rest of the cinnamon mixture. Use a knife or skewer to gently swirl the cinnamon through the batter.
  8. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean. Check at 50 minutes to avoid overbaking.
  9. Let the bread cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.

Notes

Drain zucchini well to avoid soggy bread. Do not overmix batter to keep bread tender. Tent with foil if top browns too quickly. Use room temperature eggs for best results. Vegan and gluten-free substitutions available.
