Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a 10-12 cup bundt pan thoroughly with baking spray or butter and flour.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice. Set aside.
  3. In a large bowl, beat eggs, granulated sugar, brown sugar, and vegetable oil until well combined. Add vanilla extract and mix.
  4. Stir in pumpkin puree until the batter is smooth and orange.
  5. Gradually add dry ingredients to wet mixture. Fold gently with a rubber spatula until just combined. Do not overmix.
  6. Pour batter into prepared bundt pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  8. Let cake cool in pan for 10 minutes, then invert onto a cooling rack to cool completely.
  9. While cake cools, whisk together confectionersโ€™ sugar, maple syrup, heavy cream, and a pinch of salt until smooth and pourable.
  10. Drizzle glaze over completely cooled cake and let set for 15 minutes before slicing.
