These moist and flavorful mini muffins combine fresh zucchini with gooey chocolate chips for a quick, wholesome treat that’s perfect for freezing and last-minute dessert needs.

Ingredients

  • 1 ½ cups (180g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon (optional)
  • 2 large eggs, room temperature
  • ⅓ cup (80ml) vegetable oil or melted coconut oil
  • ½ cup (100g) granulated sugar
  • ½ cup (110g) packed light brown sugar
  • 1 tsp vanilla extract
  • 1 ½ cups (about 180g) finely grated zucchini, squeezed dry
  • ¾ cup (130g) semi-sweet chocolate chips
  • Optional toppings: extra chocolate chips, chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your mini muffin tin or line with silicone liners.
  2. Grate the zucchini finely using a box grater or food processor. Place grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. In a large bowl, whisk eggs until combined. Add vegetable oil, granulated sugar, brown sugar, and vanilla extract. Whisk until smooth and glossy.
  5. Gradually add the dry ingredients to the wet mixture, folding gently with a rubber spatula until just combined.
  6. Fold in the squeezed zucchini and chocolate chips until evenly distributed.
  7. Spoon batter into prepared mini muffin tin, filling each cup about ⅔ full. Sprinkle extra chocolate chips on top if desired.
  8. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Squeeze out excess moisture from zucchini to prevent soggy muffins. Do not overmix batter to keep muffins tender. Mini muffins bake quickly; start checking at 15 minutes. Muffins freeze well; cool completely before freezing. Reheat in microwave or toaster oven.
