  • 4 ripe but firm peaches, halved and pitted
  • 1/4 cup honey
  • 2 tablespoons bourbon
  • 1 cup mascarpone cheese, chilled
  • 1/2 cup shelled, unsalted pistachios
  • 2 tablespoons granulated sugar
  • 1 tablespoon unsalted butter
  • 1 teaspoon freshly squeezed lemon juice
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Rinse 4 ripe peaches and carefully slice each in half, removing the pits. Set aside.
  2. In a small bowl, whisk together 1/4 cup honey and 2 tablespoons bourbon until smooth.
  3. Heat 1 tablespoon unsalted butter in a small saucepan over medium heat. Add 1/2 cup shelled pistachios and 2 tablespoons granulated sugar. Stir constantly for about 3-5 minutes, until nuts are toasted and sugar is melted and sticky. Spread on parchment paper to cool.
  4. In a medium bowl, combine 1 cup mascarpone cheese, 1 teaspoon freshly squeezed lemon juice, 1 teaspoon vanilla extract, and a pinch of salt. Whisk until smooth and creamy. Chill until ready to serve.
  5. Heat your grill or grill pan to medium-high (about 375°F or 190°C). Oil the grates lightly to prevent sticking.
  6. Brush the cut side of each peach half generously with the honey bourbon glaze. Place peaches cut side down on the grill. Grill for about 4-5 minutes until grill marks appear and peaches start to caramelize. Flip and grill another 2-3 minutes on the skin side to warm through.
  7. Arrange grilled peaches on serving plates. Spoon a dollop of the mascarpone mixture over each. Sprinkle candied pistachios on top for crunch and a pop of color.

Notes

Choose peaches that are ripe but still firm to avoid them falling apart on the grill. Brush peaches with glaze right before grilling to prevent burning. Stir candied pistachios constantly and remove from heat as soon as sugar melts to avoid burning. Let grilled peaches rest a minute after grilling to let flavors settle. For dairy-free, substitute mascarpone with coconut cream and honey with maple syrup. For alcohol-free glaze, substitute bourbon with peach nectar or apple juice.
