  • 2 stalks green onions, thinly sliced
  • Pinch of red pepper flakes (optional)
  • Freshly ground black pepper to taste

Instructions

  1. Bring a large pot of water to a boil. Add the udon noodles and cook according to package instructions, usually 2-3 minutes for fresh or 5-6 minutes for frozen. Stir occasionally to prevent sticking. Drain and set aside.
  2. Peel and finely mince 3 cloves of fresh garlic.
  3. Heat 3 tablespoons of unsalted butter in a large skillet over medium heat. Swirl the pan occasionally as the butter melts and begins to foam. When it turns light golden brown and smells nutty (about 2-3 minutes), add the minced garlic.
  4. Stir the garlic in the browned butter for about 1 minute until fragrant and slightly softened, being careful not to burn it.
  5. Toss the drained udon noodles into the skillet with the garlic butter. Use tongs or a wooden spoon to coat the noodles evenly.
  6. Pour in 1 tablespoon soy sauce and 1 teaspoon toasted sesame oil. Toss everything together to combine. Add freshly ground black pepper and a pinch of red pepper flakes if using. Taste and adjust seasoning as needed.
  7. Remove from heat, sprinkle thinly sliced green onions on top, and give a final gentle toss. Serve immediately while warm.
