  • 1 stalk green onion, thinly sliced (for garnish)

Instructions

  1. Rinse the garlic scapes under cold water and pat dry. Chop into roughly 1-inch pieces. Mince the garlic clove if using. Beat the eggs in a bowl with a pinch of black pepper and set aside.
  2. Place a 10-inch non-stick skillet or wok over medium heat. Add the vegetable oil and swirl to coat the bottom evenly. Heat until hot but not smoking.
  3. Add the minced garlic first and stir for about 30 seconds until fragrant. Quickly add the chopped garlic scapes. Stir-fry briskly until bright green and slightly softened but still crunchy, about 2-3 minutes.
  4. Lower the heat to medium-low. Pour the beaten eggs evenly over the garlic scapes in the pan. Let sit undisturbed for about 15 seconds, then gently stir and fold the eggs with a spatula to scramble softly until fluffy, about 2-3 minutes.
  5. Drizzle the soy sauce and optional sesame oil over the eggs and scapes. Toss gently to combine. Taste and add more black pepper if desired. Remove from heat.
  6. Sprinkle sliced green onions on top for garnish. Serve immediately while warm.

Do not overcook garlic scapes to maintain crunch and bright color. Beat eggs well for fluffy curds. Use moderate heat to avoid rubbery eggs. Add soy sauce at the end to prevent eggs from becoming watery or too salty. For gluten-free, substitute soy sauce with tamari or coconut aminos.
