  • 1 bottle (750 ml / 25 fl oz) chilled Champagne or sparkling wine (brut or extra dry recommended)
  • ½ cup (120 ml / 4 fl oz) peach nectar
  • A handful of fresh mint leaves for muddling and garnish
  • 1 tablespoon (15 ml / 0.5 fl oz) fresh lemon juice (optional)
  • 1 tablespoon (15 ml / 0.5 fl oz) simple syrup (optional)

Instructions

  1. Peel the peaches by blanching them in boiling water for 30 seconds, then plunge into ice water and slip off the skins. Chop into chunks and place in a blender. (About 10 minutes)
  2. Blend peaches until smooth but still slightly textured—soft and velvety, not watery. If needed, blend in batches. (2-3 minutes)
  3. Place a few mint leaves in a mixing glass or small bowl. Gently press with a muddler or the back of a spoon to release oils without shredding the leaves. (1 minute)
  4. Pour the peach puree into a large pitcher. Stir in the peach nectar, fresh lemon juice, and simple syrup if using. Add the muddled mint and gently stir to combine. (2 minutes)
  5. Refrigerate the peach mixture for at least 20 minutes to let flavors meld and keep it cold.
  6. Pour about ¼ cup (60 ml / 2 fl oz) of the peach mixture into each champagne flute. Slowly top with chilled champagne or sparkling wine (about 4-5 ounces / 120-150 ml), pouring gently down the side to preserve bubbles. (5 minutes)
  7. Add a fresh mint sprig and a thin peach slice to each glass. Serve immediately.

Notes

Use ripe but firm peaches for best texture. Chill peach mixture and sparkling wine before assembling to keep bubbles lively. Pour sparkling wine slowly over peach mixture to avoid fizzing over. Mint should be gently muddled, not pulverized, to avoid bitterness. Simple syrup is optional depending on peach sweetness. Leftover peach mixture can be refrigerated up to 2 days but do not mix with champagne until serving.
