  • 1 tablespoon honey (or agave/maple syrup for vegan option)
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon ground cumin (optional)
  • 1 tablespoon olive oil

Instructions

  1. Peel and dice 3 medium ripe peaches into small, even pieces (about ½ inch). If peaches are very juicy, gently pat dry with a paper towel.
  2. Carefully chop 1-2 habanero peppers, wearing gloves to avoid skin irritation. Remove seeds for less heat.
  3. Finely dice half a small red onion (about ¼ cup).
  4. In a medium mixing bowl, combine diced peaches, habaneros, and red onion. Add ¼ cup chopped fresh cilantro.
  5. Squeeze the juice of one fresh lime over the mixture. Stir in 1 tablespoon honey, ½ teaspoon salt, and ¼ teaspoon ground cumin if using. Drizzle 1 tablespoon olive oil and gently fold everything together.
  6. Let the salsa sit for about 10 minutes to allow flavors to meld. Optionally, pulse a few times in a food processor for a smoother texture, but avoid overblending.
