A bold, refreshing frozen treat combining sweet pomegranate, tart lime, tequila, and a spicy chili kick, perfect for cooling down on hot summer days.

Ingredients

  • 1 cup (240 ml) Tequila Blanco
  • 1 cup (240 ml) Pomegranate Juice (freshly squeezed or store-bought 100%)
  • 1/2 cup (120 ml) Fresh Lime Juice
  • 1/4 cup (60 ml) Orange Juice
  • 23 tablespoons Agave Syrup
  • 1 teaspoon Chili Powder (ancho chili powder preferred)
  • 1/4 teaspoon Salt
  • Optional: Fresh Pomegranate Seeds for garnish

Instructions

  1. Juice your fresh limes and oranges until you have about 1/2 cup of lime juice and 1/4 cup of orange juice. Strain out any seeds or pulp.
  2. In a blender or mixing bowl, combine 1 cup tequila blanco, 1 cup pomegranate juice, fresh lime and orange juices, 2-3 tablespoons agave syrup, 1 teaspoon chili powder, and 1/4 teaspoon salt. Blend or whisk until well mixed and smooth.
  3. Taste the mixture and adjust sweetness or heat by adding more agave syrup or chili powder as desired.
  4. Pour the mixture into popsicle molds, leaving room at the top for expansion. Optionally, sprinkle fresh pomegranate seeds into each mold.
  5. Insert sticks or lids and freeze for at least 6 hours or overnight until fully solid.
  6. To unmold, run warm water over the outside of the molds for 10-15 seconds and gently pull out the popsicles. Serve immediately.

Notes

If the mixture is too thick to pour, stir in a tablespoon of water or orange juice. Avoid rushing freezing time to prevent icy texture. For non-alcoholic version, replace tequila with extra orange juice or sparkling water. Adjust chili powder gradually to balance heat.
