These spiderweb cookies are the kind of Halloween treat that stops people mid-conversation. They look like you spent hours in a professional bakery, but the secret is in the techniqueโ€”not the time.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened to room temperature
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons pure vanilla extract
  • ยฝ teaspoon almond extract
  • 2 ยฝ cups (312g) all-purpose flour, spooned and leveled
  • 1 teaspoon baking powder
  • ยฝ teaspoon fine sea salt or table salt
  • 3 cups (360g) powdered sugar, sifted
  • 2 tablespoons meringue powder
  • 45 tablespoons warm water
  • ยฝ teaspoon vanilla extract (optional)
  • Black gel food coloring

Instructions

  1. Cream the butter and sugar (5-7 minutes). In your mixing bowl, beat the softened butter and granulated sugar together on medium-high speed until the mixture is pale, fluffy, and almost doubled in volume. Scrape the bowl down at least once.
  2. Add the wet ingredients. Beat in the egg, vanilla extract, and almond extract on medium speed until fully combined. The mixture might look slightly curdled at this pointโ€”that’s normal.
  3. Whisk the dry ingredients separately. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. Combine wet and dry. Gradually add the dry mixture to the wet mixture on low speed, mixing just until the dough comes together. Stop as soon as no streaks of flour remain.
  5. Chill the dough (at least 1 hour). Divide the dough in half, flatten each into a disc, wrap tightly in plastic wrap, and refrigerate.
  6. Preheat and prepare. Preheat your oven to 350ยฐF (175ยฐC). Line two baking sheets with parchment paper or silicone mats.
  7. Roll and cut. On a lightly floured surface, roll one disc of dough to ยผ-inch thickness. Cut out rounds using your cookie cutter and place them 2 inches apart on the prepared baking sheets. Re-roll scraps once.
  8. Bake (8-10 minutes). Bake until the edges are just barely golden. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. Make the royal icing. In a large bowl, combine the powdered sugar and meringue powder. Add 4 tablespoons of warm water and the vanilla extract. Beat on low speed until combined, then increase to medium-high and beat for 4-5 minutes until the icing is glossy and holds stiff peaks. If too thick, add water ยฝ teaspoon at a time. If too thin, add more powdered sugar.
  10. Divide and color the icing. Transfer about โ…” of the icing to a separate bowl. Leave this white. To the remaining โ…“, add black gel food coloring until deep black. Transfer each color to separate piping bags fitted with #2 tips.
  11. Pipe the base layer. Outline each cookie with the white icing, then fill in the center using a back-and-forth motion. Use a toothpick to pop any air bubbles and spread the icing evenly to the edges. Let the base layer dry for at least 2 hours.
  12. Pipe the spiderweb. Once the base is dry, use the black icing to pipe 3-4 concentric circles on each cookie, starting from the center and working outward. Then, use a toothpick to drag from the center outward through all the circles, creating the web effect. Wipe the toothpick clean after each drag.
  13. Let the icing set completely (4-6 hours or overnight). The cookies are ready when the icing is firm to the touch and no longer shiny.

Notes

Use gel food coloring, not liquid, to avoid runny icing. Humidity affects drying time; on humid days, icing may take up to 8 hours to set. Practice piping on parchment paper first. Don’t skip the almond extractโ€”it adds a nostalgic flavor. For cleanest webs, use a sharp toothpick and swap after every 3-4 cookies.
