Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 12 tsp activated charcoal powder
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 34 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • White food coloring gel (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with white cupcake liners.
  2. In a medium bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Sift in the activated charcoal powder and whisk until uniform.
  3. In a separate large bowl, whisk buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and mix on low speed until just combined. Do not overmix.
  5. Divide batter evenly among liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Cool cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. While cakes cool, beat cream cheese and butter until smooth. Add vanilla and gradually beat in powdered sugar until stiff peaks form.
  9. Pipe frosting onto cooled cupcakes to create a ghost shape (teardrop).
  10. Use black icing gel or edible markers to draw eyes and a mouth. Let set for 30 minutes before serving.

Notes

Ensure ingredients are at room temperature for best texture. Do not overmix the batter to avoid toughness. Start with 1 tsp of activated charcoal to prevent bitterness. Store leftovers in an airtight container in the refrigerator for up to 5 days. Do not microwave as they will become soggy.
