  • 1 cup (120g) all-purpose flour
  • 3 large eggs, beaten
  • 2 cups (100g) panko breadcrumbs

  • Salt and black pepper to taste
  • 2 cups (480ml) neutral oil for frying (canola, vegetable, or peanut)
  • 2 cups green cabbage, thinly shredded
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste
  • 4 soft hoagie rolls or brioche buns
  • 4 tablespoons German-style mustard (spicy brown or stone-ground)
  • Pickle slices (optional)

Instructions

  1. Place chicken breasts on a cutting board, cover with plastic wrap, and pound to an even thickness of about 1/4 inch (6mm). Season both sides generously with salt and pepper.
  2. Set up a breading station with three shallow bowls: first bowl with flour, 1/2 teaspoon salt, and 1/2 teaspoon pepper; second bowl with beaten eggs and 1 tablespoon water; third bowl with panko, smoked paprika, garlic powder, 1/2 teaspoon salt, and a pinch of pepper.
  3. Dredge each chicken piece in flour, shaking off excess. Dip into egg, letting excess drip off. Press firmly into panko mixture, coating both sides. Place breaded chicken on a plate and let rest for 5-10 minutes.
  4. In a medium bowl, combine shredded cabbage, apple cider vinegar, olive oil, honey, and a pinch of salt and pepper. Toss well and set aside.
  5. Pour about 1/2 inch (1.25 cm) of oil into a large skillet and heat over medium-high heat to 350ยฐF (175ยฐC). Test with a pinch of pankoโ€”it should sizzle immediately.
  6. Fry breaded chicken in batches (2 pieces at a time) for 3-4 minutes per side, until deep golden brown and cooked through (internal temperature 165ยฐF). Transfer to a wire rack set over a baking sheet and sprinkle with flaky salt.
  7. Pour out most of the oil, leaving a thin coating. Toast buns cut-side down in the warm pan for about 30 seconds until golden.
  8. Spread mustard on bottom half of each toasted bun. Place a piece of crispy chicken on top, add a handful of slaw, and top with pickle slices if using. Close with top bun and serve immediately.

Notes

For best results, let breaded chicken rest 5-10 minutes before frying to help coating adhere. Keep oil temperature at 350ยฐF (175ยฐC) to avoid greasy or burnt crust. Work in batches to maintain oil temperature. Season each layer of breading for maximum flavor. To reheat leftovers, use a 375ยฐF oven on a wire rack for 8-10 minutes or an air fryer at 375ยฐF for 3-4 minutes.
