  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon matcha powder or spinach powder (optional, for green color)
  • Bananas, sliced into rounds
  • Strawberries, sliced into thin strips
  • Blueberries
  • Mini chocolate chips
  • Kiwi, sliced (optional alternative to banana)

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and optional matcha/spinach powder.
  2. In a separate medium bowl, whisk the eggs, milk, melted butter, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and gently fold together with a spatula or whisk until just combined. Do not overmix; lumps are okay.
  4. Heat a griddle or skillet over medium heat. Test readiness by flicking water drops onto the surface; they should dance and evaporate.
  5. Lightly grease the pan with butter or oil, wiping away excess with a paper towel.
  6. Pour 1/4 cup of batter onto the griddle for each pancake.
  7. Immediately place fruit slices on top of the wet batter: banana slices for eyes, blueberries or chocolate chips for pupils, and strawberry strips for a mouth.
  8. Cook for 2-3 minutes until bubbles form on the surface and pop, leaving open holes, and edges look set.
  9. Carefully flip the pancakes, supporting the fruit with a hand if needed.
  10. Cook for another 1-2 minutes until the bottom is golden brown and the fruit is warmed through.
  11. Transfer to a plate and keep warm in a 200°F oven while finishing the batch.

Notes

Ensure batter is thick enough to support the fruit. Place fruit immediately after pouring batter to prevent sliding. Cook on medium-low heat to avoid burning fruit sugars. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, use plant-based milk, flax eggs, and coconut oil.
